WThis is an easy version of a drink from our latest menu. It's a batch prepared mix that is bursting with tastes of a festive period, which makes it excellent for a festive gathering. Reserve the remaining citrus syrup for brunch beverages, puddings, or for additional servings of the drink.
The Bikini Cocktail
Serves 10 guests
For the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Premix (yields 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Directions
For the Cordial: Place all the components into a pan, bring to a simmer, agitating to dissolve. After that, remove from the stove and leave to reach room temperature entirely. Pour into an clean bottle, close it keeping it in the fridge, it can be stored for about one month.
Preparing the Premix: Combine every liquids in a sizeable container, let it rest for one hour, then filter it best through muslin, making it fully clarified.
To serve: Pour 85ml of your batch mix into your stirring glass filled with ice, gently stirring lightly for one minute to chill. Filter to a cold coupe glass or similar, top with some cranberries and complete it with a brief mist of the essential oil above the glass.
